Two busy weeks of job searching and home schooling. I needed to bake!
My mother sent me a recipe on how to make an easy cheese danish. I usually order them from a grocery store but every time I get so disappointed with the one bite of cheese and all dry bread. I always keep extra cream cheese in the fridge in case I want to make some cupcakes(love cream cheese buttercream). And silly me had meant to order just two crescent rolls ended up ordering an extra. Guess I was meant to try out this recipe. Of course I had to put my own twist to it.
I made a pumpkin spice cheese danish…..My husband complained and said ” why does everything you have to make now consist of pumpkin spice?” HELLO, IT IS FALL and everything is literally pumpkin spice. Plus no one said he had to eat any of it.
You will need:
1- tube of Pillsbury crescent rolls
1- 8 oz package of cream cheese
1/2 cup of sugar- I used 1/4 cups of sugar (again I always use less of what recipe calls for)
1 tablespoon of vanilla even though recipe said teaspoon
3 tablespoon of all purpose flour
1 tablespoon of pumpkin pie spice ( I added this)
Mix all the ingredients together. Well of course you do NOT mix the crescent rolls. But you do need to spread them out onto an non creased baking pan. Make sure to pinch the seems together.
Now silly me forgot to take a picture of the mixture. But spread it in the middle of the crescent dough. Then you will cut slits on either side and fold them over.
Instead of using icing. I just sprinkled some sugar and cinnamon. Placed it into a preheated 375 degrees oven and baked for about 18 minutes.
It came out perfect! Plenty of filling and a nice not to bready flaky crust. Went amazing with a nice hot cup of coffee. Kids and husband had it all gone in two breakfasts. I think next time I will make a cranberry filling.

My personal update- Unsuccessful homeschooling. Kids not wanting to cooperate. I have applied to so many jobs yet the only two interviews I had were from- one being my landlord. She asked me to apply and scheduled an interview with her. Still not just her decision but she really wants me to work here with her. Another is for a Benefits coordinator in a dental office. The manager said she just happed to come across my resume and asked if I would like an interview. I love my landlord and I love the dental field but I need a job ASAP so whichever gives me a jobs first is the job I have to take. I know rent, food and bills are top priority but I do have small kids who still believe in Santa. And with how bad this freaken year has been… Well, we just a little Christmas…
