Too Hot to turn on oven! Microwave Mug Cake

I live in a state that rains alot and doesn’t really ever get dreadfully hot. The summers are mostly in the 70’s to the high 80’s. I hate anything over 75 degrees. But for some freaken reason we had several days where it was in the low 90’s. And we do NOT have air conditioners in apartments. The last thing I want to do is cook or even bake. Turning on my stove to cook food just means I am cooking the family as well.

Well the kids all wanted some kind of dessert. Unemployment still hadn’t been cleared up so I was very limited on my ingredients. I had the basic stuff such as eggs, flour, cocoa powder ect.. I remembered my mom sending me a recipe for microwaveable mug cakes. I have no idea where she got it from but it was very simple with a very few needed ingredients.

  1. Flour
  2. Milk
  3. Sugar
  4. Oil
  5. Baking Powder- I grabbed the baking soda by mistake even though some recipes did use baking soda instead of baking powder.
  6. Cocoa powder
  7. Salt
  8. Vanilla
  9. Chocolate Chips
  10. Mug that is Microwave safe

In a microwavable mug we put in 3 tablespoons of flour, the recipe says 3 tablespoons of sugar but I only added 1 tablespoon, 2 tablespoons of cocoa powder, 1/4 teaspoon of baking powder and a pinch of salt. Mix all of these dry ingredients in the mug.

Then we added 3 tablespoons of milk, 3 tablespoons of oil and 1/2 teaspoon of vanilla. The recipe said a splash but I am trying to teach my son how to measure. And again mixed the wet with the dry.

This is what it will look like and if you want you can mix in some chocolate chips. We put in some white chocolate chips along with some semi sweet. My son goes crazy for white chocolate so I will always have to incorporate them in almost everything I bake.

Pop it in the microwave for only 90 seconds. You do NOT want to do it for any longer then that or it will become very dry. And yes 90 is all you need.

I made whipped cream to put on the top along with a dusting of cocoa powder and sprinkles. Yes this is a different cup. My son likes to do a ” Taste Test”.

I looked up different recipes and they were all basically the same. The only difference is that some did use baking soda instead of baking powder.

This is a perfect dessert to make on a nice hot summer day when you are craving something chocolaty. Its quick, very easy with just a few ingredients and will not heat up your house. Total time from start to finish is about 3 minutes. I do suggest adding whipped cream. It is not moist like a cake or cupcakes but it is very Delicious and the whipped creams helps with some of the dryness. If your making this for adults you can also add a tablespoon of rum or bourbon into the whipped cream. And I do recommend you wait a few minutes before you try to eat it. ITS HOT! and whipped cream will immediately melt.
