Baking alone

Sleeping has been so difficult for me these last few weeks. I literally have so much on my mind. Stress about money, work, kids school, rent ect… It really doesn’t help that they suddenly stopped my unemployment. A mistake on their part and of course it has now been 7 long weeks and still not fixed. All I have to say is thank God my husband has a good job and our Landlord made rent arrangements for us.

Anyway, I got up real early from having slept about 3 hours at the most wanting to bake something. I love how my 9 year old will be quick to grab that apron asking “What are we baking today” but I wanted to do this alone. I also needed some thinking time. Thinking about my blogs and if it is something that I really want to keep on doing. Or if I just want to focus on just baking and end the subscriptions. I am growing yes but will it really go anywhere? I backed off on the social media because to be honest don’t think that really helps much. I seemed to be doing better off then on.

My ingredients are limited so I thought that I would make just a simple dark chocolate cupcake along with a white chocolate and chocolate buttercream frosting.

My ingredients: I use the Hershey basic recipe but I change it for me. I cut and add some ingredients.Not to mention this I used the Ghiradelli cocoa.

Cocoa powder( ghirardelli dark)- 3/4 cup

dark chocolate chips- 1/2 cup, melted

sugar -1 cup

flour- 1 3/4 cups

baking powder -1 1/2 tsp

baking soda- 1 1/2 tsp

salt- pinch

vanilla- 1 tbsp

eggs- 2 eggs

milk- 1/2 cup

oil- 1/2

coffee- 1 cup of hot coffee( I used Folgers dark roast)

Preheat oven 350 degrees- cook for about 25 minutes. Then them completely cool down before frosting. This made about 24 cupcakes.

For the white chocolate buttercream: I really don’t go by any recipe just get what I want and mix. I have never not made a good frosting so far.

white chocolate melted (ghirardelli)


I added about 1/8 of a cup of bourbon(for adults only of course)

For the chocolate buttercream:

Semi Sweet chocolate chips

powder sugar


butter ( grass fed)

I added about 1/8 of a cup of Kahlua (again to be clear in the ones for the adults, me and my husband ONLY)

I love the frosting part of the cupcakes. I love to come up with different flavors but this time I just wanted simple basic buttercream flavors. And I also wanted to make it up to my son by making him white chocolate buttercream. He goes freakingly crazy for anything white chocolate. Love that kid! Takes after his mom. I had 24 very moist and delicious cupcakes waiting for my little monsters to devour.

I really love to bake. To me it is fun and totally relaxing. I am far from being an expert but so far I have yet to make anything that was not edible. These were gone in about 2 days so I guess that is proof right there. I did have to promise that the next baking project would include my 9 year old.

    I connect with you so much on sometimes needing some time alone to think and smile and cry to yourself, especially when you are feeling overwhelmed, and doing something with my hands always helps me. Sometimes kids help too, sometimes not. 🙂
