I have been really struggling to do anything this last week. Between not feeling well emotionally and physically, all I have been wanting to do is stay in bed not moving.It seems like I have my good weeks only to have my bad weeks. Lately it seems I am having more bad then good. I have to force myself to get up and make sure kids get fed. My husband finally started a new job so I really have to force myself.
My youngest really wanted to bake something. He really enjoys the baking more so then the others lately. I looked for something different for us and something that would not take a long time. I needed something chocolate but not just plain chocolate. He grabbed our aprons which I think we need to look for some new ones. These are getting really old and raggedy.
Got out all the ingredients for a Chocolate Bundt Cake; I decided that in the middle would be a yummy cheesecake filling and a Kahlua chocolate ganache.
In one bowl he got one cup of coffee, the two sticks of cubed butter and about 3/4 unsweetened cocoa powder. I also added about 1/4 cup of chocolate chips. I like things to be real chocolaty. I did the microwave part because he can not reach. Once butter melted he mixed it all.
Once the cake part was all mixed and now we had to get the cheesecake ready. I love cheesecake! I have gotten real good at making really nice creamy smooth cheesecake. We had the cream cheese for a little bit in order for them to be room temperature. We used 1 1/2 packages(each package was 8 oz). Then added 1/2 cup sugar, teaspoon vanilla and one egg. My son is too freaken cute. He is so extremely proud of the fact that he can now crack eggs without my help.
In a buttered pan layer the mixtures. First chocolate, then cheesecake then chocolate. I did this part to help show him how to add the layers. After all that was done we placed it in into a preheated 350 degree oven baking it for about 55 to 60 minutes. When done we let it sit for a couple minutes before removing from the pan.
When the bundt cake is all cooled down we got the ingredients out to make the ganache. He measured 3/4 cups chocolate chips, and the 1/4 cup heavy whipping cream while I measured the 1/4th cup Kahlua. Put it in the microwave for 15 seconds, stirred then another 15 seconds. Once chocolate melted, let sit, then mixed. Got our cooled off caked and poured the ganache. He chose the pretty pink sprinkles with pearls. I was surprised because before everything always had to be decorated in the gold edible stars.
This was one delicious cake. He could not wait to try what he helped bake but this time he had to wait til after dinner. Kids ask for the usual “taste test” but since we didn’t make cupcakes it was kind of hard plus it was about dinner time. When dessert was served it didn’t take them long to eat with a nice cup of coffee. It didn’t last period because they ate it for breakfast the next day along with eating some for dessert for after dinner. They loved the cheesecake center. Took two days for it to be completely gone. I do have to say baking with my son does help keep my mind off things. I wish I could bake 24/7.
